Shami Kabab Pulao: English Recipe
Ingredients for stock:
- Beef meat – 1 kg
- Dry coriander seeds – 1 tbsp
- Fennel seeds – 1 tbsp
- Big Cardamoms – 2
- Cinnamon stick – 1
- Cloves – 4 to 5
- Bay leaf – 2 to 3
- Whole Black pepper – 1 tsp
- Whole dry red chilies – 8
- Chopped garlic – 4 to 5 cloves
- Onion – 1 halved
- Ginger – 2 pieces
- Salt – 1 tsp

Method for stock:
- Add bay leaf, black pepper, cloves, fennel seeds, dry coriander seeds, big cardamoms and cinnamon stick in a spice bag. Tie the bag and put it in the pan.
- Add ginger, garlic, onion, whole dry red chilies, salt and beef along with 1 litre of water and cook until meat is tender.
- When it’s done, take out the meat from the stock.
- Strain stock and throw out the masala.
Ingredients for Pulao Masala:
- Oil or Ghee – 1/2 cup
- Onion – 2 sliced
- Ginger garlic paste – 2 tsp
- Cumin seeds – 1 tsp
- Cinnamon sticks – 2
- Star anise- 2
- Big cardamoms – 2
- Cloves – 4
- Black pepper – 1/2 tsp
- Bay leaves – 2
- Green cardamom – 4
- Blended tomato – 1 to 2
- Salt – 1 tsp or to taste
- Ground cumin seeds – 1 tsp
- Ground dry coriander seeds – 1 tsp
- Soaked Rice – ½ kg
Garnishing:
- Tomato – 1 sliced
- Green Chilies – 2 sliced
- Fried onion – 1/4 cup
- Fresh coriander – 1 tbsp
Method:
- In a separate pan, heat up ghee/oil and fry onions until golden brown. Take out some fried onions for garnishing.
- Add ginger garlic paste along with Cumin seeds, Cinnamon sticks, Star anise, Big cardamoms, Cloves, Black pepper, Bay leaves, Green cardamom and Blended tomato.
- Add Beef and fry well.
- Then add ground coriander, ground cumin seeds and salt.
- Add stock and bring it to boil, then add soaked rice and cook until water dries.
- Then add sliced tomatoes, green chili and fried onions. Put on dum for 20 minutes.
- Serve with salad and raita.
