Black Forest Gateau Dessert

Ingredients for Sponge:

  1. Eggs – 4
  2. Caster sugar – ½ cup
  3. Flour – ¾ cup
  4. Coco powder – ¼ cup
  5. Vanilla essence – 1 tsp
  6. Salt – 1 pinch

Method:

With an electric mixer, whisk eggs and sugar on HIGH speed for about 5 to 7mins, until the batter doubles in volume. Turn to low speed and whisk for another 1 to 2 minutes. Then add sifted flour, salt, vanilla essence and coco powder into the batter. With a spatula, gently fold in the flour until it’s well blended. Pour the batter into the Greased 8” pan, and bake on Pre-heat oven to 200ºC and gas mark 6 for 10 to 12 minutes, or until a skewer inserted in the centre comes out clean. Let it cool down completely. Then cut in 3 layers and decorate with fudge sauce, fresh cream and mix fruits.

For cake filling:

  1. Crushed chocolate – ¼ cup
  2. Whipping cream – 600ml
  3. Praline – 1 cup (peanut)
  4. Mix fruit or fruit cocktail – 1 tin
  5. Strawberry jam – 3 tbsp
  6. Cherries – as required

Chocolate fudge sauce:

  1. Crushed chocolate – 1 cup
  2. Cream – ½ cup
  3. Butter – 1 tbsp

Mix crushed chocolate and butter in warm cream and make sauce.

Last Method:

Divide whipped cream into 3 parts. Mix fruit in 1 part, in 2nd part add jam and mix well, and 3rd part put in piping bag for decoration. Slice the cake into 3 layers. Place one of the cake layers in glass bowl, then spread sugar syrup, then fruit mix cream, then 2nd layers of cake, then jam mix cream, sprinkle crushed chocolate and praline. Then place 3rd layers of cake, pour fudge sauce and decorate with cream and cherries.
