How to Make Mazedar Irani Zarda in Urdu – English

You’ve tried many simple recipes of zarda, but if you try this special Irani zarda recipe with chicken, it will give you a unique and different sweet and salty taste.

Mazedar Irani Zarda


  1. Chicken – 1 kg
  2. Boiled sela rice – ½ kg
  3. Sugar – 1 ½ cup
  4. Ghee – ½ cup
  5. Onion – 2
  6. Pistachio, almonds – as required
  7. Sugar candy – as desired
  8. Salt – 1 tsp
  9. Ginger garlic paste – 1 tsp
  10. Green cardamoms – 4
  11. Black pepper – 1 tsp
  12. Saffron – 1 pinch
  13. Rose water – 2 tsp
  14. Green food color – 1 pinch
  15. Oil – 2 tbsp


Take a pan, add oil and sauté onion. Then add chicken and fry until chicken pieces turn into light brown. Now add ginger garlic, salt and black pepper, fry for 1 to 2 minutes. Add 1 ¼ cup of water, cover and cook until chicken is tender and water dries until ¼ cup stock is left. Take another pan, add ghee and fry pistachio and almond, take them out from the ghee and in same ghee, fry green cardamoms. Add boil rice and sugar mix well. Now add chicken pieces, pour remaining stock and cook until stock evaporates. Then add food color, fried nuts, saffron, sugar candy and rose water. Cover and put on dum for 10 minutes. Irani zara is ready. Garnish with dry fruit and serve.
