Our body asks us for fresh meals and salads are the perfect food to please it. Quick, simple, colorful and delicious, they are also a very nutritious dish. This Quinoa and Kale Salad is the perfect choice!

Quinoa is a seed but it cooks like a cereal. It is primarily a carbohydrate but it is also a complete protein source (it contains all the essential amino acids). It provides a high intake of fiber, minerals, B vitamins and vitamin E. It is also perfect for celiac, as it does not contain gluten.

On the other hand, kale is probably one of the most nutritious foods out there. It is high in antioxidants and is a source of vitamin C, vitamin K, calcium, iron, and fiber.

Kale Quinoa Salad with Feta Dressing

Ingredients:

  1. kale leaves – 3 cups chopped
  2. Salt – 1/4 tsp
  3. Black pepper – 1/4 tsp
  4. Extra virgin olive oil – 1 tbsp
  5. Dry quinoa – 1/4 cup
  6. Water – 1/2 cup
  7. Cherry tomato – 1/2 cup cut in halves
  8. Black olives – 1/4 cup sliced
  9. Walnuts – as required

Fried Fish

Feta Dressing:

  1. Garlic – 1 tsp minced
  2. Feta cheese – 1/3 cup crumbled
  3. Salt – 1/4 tsp
  4. Black pepper – 1/4 tsp
  5. Lemon juice – 2 tsp
  6. Extra virgin olive oil – 1 tbsp

Method to Prepare Kale Quinoa Salad:

  • Cook the quinoa in a pan. The amount of quinoa is cooked in twice the water. Cover and bring to simmer over medium heat then leave for 12 – 15 minutes until all water is absorbed.
  • When the quinoa water has evaporated, let it cool down.
  • Meanwhile, in a bowl, massage the kale with a little oil, salt and black pepper.
  • This helps to break down the structure of the cell wall, making it softer, tastier and more digestible and the nutrients are enhanced, facilitating their absorption.
  • Then add the tomato, olives and cooked quinoa.

Prepare Feta Dressing:

  • Add garlic, feta cheese, salt, black pepper, lemon juice and olive oil in a bowl or in a jar. Mix it well.
  • Add dressing in the salad and garnish with remaining feta cubes and chopped walnuts, serve with any kind of meal.
