Lemon Drizzle Cake Slices
Classic Devil’s Food Cake Recipe by Anne Olson
Ingredients:
- Butter – 70 grams
- Caster sugar – 120 grams/1/2 cup plus 2 tbsp
- Egg – 2
- Plain flour – 140 grams/1 cup plus 1 1/2 tbsp
- Salt – 1 pinch
- Baking powder – 1 tsp
- Lemon zest – (grated) 1 tsp
- Yogurt – 4 tbsp
- Milk – ¼ cup
For the drizzle topping:
- Granulated sugar – 30 grams
- Lemon juice – 1 tbsp
- Water – 1 tbsp
Method :
- Beat butter and sugar until light and fluffy. Then add eggs and beat.
- Now add yogurt, milk and lemon zest, beat for 5 seconds.
- Then add dry mixture and lightly fold with spatula.
- Then pour in a greased baking pan and bake in preheated oven on 180 C/Gas mark 4 for 25 to 30
- minutes.
- Meanwhile mix lemon juice, water and granulated sugar to make the drizzle and pour over the hot cake
- and leave to cool in this tin .
- Then remove from the tin and sprinkling the caster sugar on top cut the slice and serve.
