How to Make Sheer Chai (Pink Tea)

Sheer chai from Kashmir with its distinctive pink color. Sheer Chai also called Salt tea, Sheer Chai, Pink tea. Kashmiri tea is a traditional tea beverage made in Kashmir. The name “Noon” refers not to the time of day, but is a local word for salt- “Noon”.
It is made from special tea leaves, milk, and salt. A pinch of baking soda is added to help give it a pink color. It is prepared with pistachios and cardamom and is consumed primarily at special occasions, weddings, and during the winter months when it is sold at many kiosks.

Ingredients:

  1. Water – 2 cup
  2. Green tea – 2 tsp
  3. Milk – 2 cups
  4. Baking soda – ¼ tsp
  5. Salt – to taste
  6. Green cardamoms – 2
  7. Star anise – 1
  8. Cream/malai – as required
  9. Crushed almond and pistachio – 1 tbsp

Method:

Put 1 cup of water, tea and baking soda in a saucepan. Bring to boil until color of tea turns reddish brown and water left half quantity, mix well. Now add one cup cold water, cardamom and star anise.  Boil again for 5 minutes. Add salt and milk, color of tea will turn pink. Boil 1 more minute, strain and pour in cups. Garnish with some cream/malai, crushed almond and pistachio. Serve with hot roth and enjoy.

Ingredients:

  1. Water – 2 cup
  2. Kashmiri tea – 2 tablespoon
  3. Baking soda – 1 pinch
  4. Green cardamon – 3
  5. salt – 1 pinch
  6. Sugar – 1/2 cup or to taste
  7. star anise – petals of Baadian Khataaii
  8. Milk – 3 cups
  9. Chilled water – 2 cups

Method:

  • In a saucepan add 2 cups water, bring to boil. then add tea leaves, green cardamoms and sugar, let it boil.
  • Then add baking soda, salt, mix well.
  • Take the pan off the stove, add cold water to it.
  • Before adding the cold water, you should see a burgundy/dark pinkish film on the surface.
  • That tells you have boiled it to the right level and the colour will be great.
  • Take a ladle, fill it with the boiled tea and blend it by pouring repeatedly.
  • You take tea in the ladle and raise the level of the ladle about 8-10 inches and pour the tea back to the pan.
  • Doing it at least 6 minutes will make a change in the colour of tea.
  • Take a strainer and strain the tea, add milk and one petal of Baadian Khataaii (star anise, if available).
  • Let it boil for three to four times and then serve in a tea pot or put it in your tea cup directly and garnish with crushed almonds and pistachio.

Ingredients:

  1. Water – 10 Cups
  2. Kashmiri Tea Leaves – 3 Tbsp
  3. Cooking Soda – ½ tsp
  4. Salt – 1 Tsp
  5. Green cardamoms – 6 Crushed
  6. Milk – As Desired
  7. Sugar – to taste

For Garnish:

Few Almonds and Pistachios, Crushed.

Method:

  • Mix everything except Milk, Almond and Pistachios in kettle and bring to boil till water reduced to half.
  • Reduced heat and add cold water (approx 4 to 5 cups), simmer and mix well till its colour changed to pink.
  • Add milk and simmer 5 minutes more in low heat.
  • Transfer it in cups and sprinkle crushed almonds and pistachios.

How to Make Kashmiri Pink Tea

Learn how to Make Kashmiri Pink Tea. Use only whole milk, because 2% and skim milk don’t work. This is a time consuming recipe, use whole milk or half and half.

Ingredients:

  1. Water – 5 cup divided
  2. Kashmiri tea – 1 tablespoon
  3. Baking soda – 1/4 teaspoon
  4. Green cardamon – 3
  5. salt – as you like
  6. Sugar – as taste
  7. star anise – petals of Baadian Khataaii

Method:

  • Fill a mid size saucepan with a quart of water.
  • Add 1 tablespoon of tea leaves to it
  • Add 1/4 teaspoon baking soda in water along with the tea leaves.
  • Let it boil, the tea leaves will expand and appear as small leaves lying flat on the surface of water.
  • Take the pan off the stove once the level is 3/4 of the whole.
  • Add cold water to it. 1/4 to make the 3/4 + 1/4 = 1.
  • Before adding the cold tap water, you should see a burgundy/dark pinkish film on the surface. That tells you have boiled it to the right level and the colour will be great.
  • Take a ladle, fill it with the boiled tea and blend it by pouring repeatedly. It is not like you are whipping an egg or batter. You take tea in the ladle and raise the level of the ladle about 8-10 inches and pour the tea back to the pan.
  • Doing it at least ten to twenty times will make a change in the colour of tea.
  • Now just let it sit a while.
  • Take a strainer and strain the tea into a bottle or a jar that you can keep in your fridge. Throw away the strained tea leaves. THIS IS THE BASE.
  • To prepare the tea for two people, take two cups of the strained tea.
  • Add milk to it till you get the bright pink colour.
  • Add one crushed green cardamom, one petal of Baadian Khataaii (star anise, if available) and salt (1/4 tablespoon). Let it boil for three to four times and then serve in a tea pot or put it in your tea cup directly and garnish with crushed almonds and pistachio.
