Looking for good ideas to prepare a tasty dessert at home, I have found and tested with excellent results this wonderful recipe that I want to share with my loved ones and I am sure everyone will love it just like I have happened.

Natural yogurt is the key to achieving a more delicious and healthier sweet than other common cakes. Let’s see how to do it.
It is a personal creation after searching and trying different types of lemon cake recipes, I was finally able to come up with a recipe in which the cake is very fluffy and achieves a lemon flavor and aroma that feeds into the plain and simple cake.

Plain Cake Recipe

Lemon Drizzle Cake Slices

Ingredients:

  1. Soft butter – 200 g
  2. Ground sugar – 1 cup
  3. Eggs – 4
  4. Yogurt – 4 tbsp
  5. Flour – 1 1/2 cups
  6. Baking powder – ½ tsp
  7. Salt – 1/4 tsp
  8. Lemon essence – 1 tsp
  9. Yellow food colour – 1 pinch or few drops

How to Make Pound Cake

Method:

  • Take a bowl, add butter and sugar and beat with electric beater until smooth cream.
  • Then add eggs 1 by 1 along with lemon essence and yogurt. Beat until sugar and eggs are mixed well.
  • In another bowl, mix flour, baking powder and salt.
  • Add this flour mixture in egg mixture and beat.
  • Add yellow colour and mix well.
  • Now put this mixture in loaf cake pan and bake in preheated oven on 350º F, 180º C and gas mark 4 for 40 to 50 minutes.
  • Serve this super moist plain cake with tea or coffee.

Today I went to buy some fresh fruits and I saw red and beautiful strawberries. I could not control on myself and bought a full box of strawberries. Then I thought why not make a plain vanilla cake with fresh strawberry jam and celebrate a cheat day in our diet routine. I made this delicious cake, it turned out so soft, moist and tasty!
Even my kids love this cake, that is why I thought why not share this tasty cake with all my lovely and precious visitors. You can change the strawberries to blue berries, cherries, raspberries, it’s totally up to you. Do try this delicious vanilla cake with strawberry jam and cream cheese frosting.
I am sure, once it’s cooked, you will want to eat the entire cake by yourself.

Strawberry Filling Vanilla Cake

Genoise sponge Cake Recipe

Ingredients for the cake:

  1. Flour – 1 1/4 cup
  2. Baking powder – 1 1/2 tsp
  3. Salt – 1/2 tsp
  4. Sugar – 1 cup
  5. Vegetable oil – 1/4 cup
  6. Eggs – 2
  7. Vanilla extract – 1/2 tbsp
  8. Light sour cream – 1/4 cup
  9. Milk – 1/2 cup

Method for the cake:

  • Strain dry ingredients in a separate bowl. Prepare 2 8-inch round baking pans, line the bottom with parchment paper and grease the sides.
  • In a bowl, add sugar, oil, eggs and vanilla extract, beat on medium speed until sugar disolves in eggs and oil, about 2 minutes.
  • Now add sour cream and beat until mix it well. Now add dry ingredients and beat on low speed along with milk.
  • Divide the batter evenly between the 2 pans, bake in preheated oven at 180°C for 15 to 20 minutes.
  • Let it cool down and prepare for frosting and icing.
Banana-Strawberry Smoothie

Ingredients for the filling:

  1. Strawberries – 1 cup, pureed
  2. Lemon juice – 1/2 tbsp
  3. Sugar – 1 tbsp
  4. Cornflour – 1 tbsp

Method for the filling:

  • In a pan, add pureed strawberries, lemon juice, sugar and cornflour, mix and cook over medium heat until the strawberry puree starts to thicken.
  • Take it of off the flame and let it cool completely.

Ingredients for the frosting:

  1. Heavy whipping cream – 1 1/4 cup
  2. Icing sugar – 3/4 cup
  3. Mascarpone cheese – 200 gm
  4. Vanilla extract – 1/2 tsp

Method for the frosting:

  • In a mixing bowl add chilled heavy whipping cream and beat until the cream starts to thicken.
  • Gradually add the icing sugar and continue beating on high speed until soft peaks form.
  • Then add mascarpone cheese and continue beating at a high speed until stiff peaks form.
How to Make Strawberry Cheesecake from Scratch

To assemble the cake:

  • Add cake frosting in a piping bag and make a thick boarder along the outside edge of your cake to prevent leakage of the filing.
  • Spread strawberry filling inside of the border you made. Now spread a thin layer of frosting over the strawberry filling and spread evenly with spatula.
