Ingredients:
- Gram flour – 2 cups
- Baking powder – 1 tsp
- Salt – 1/2 tsp
- Garam masala – 1 1/2 tsp
- Cumin seeds – 1 tsp
- Turmeric powder – 1/2 tsp
- Red pepper – 1/2 tsp (optional)
- Dried cilantro – 1 1/2 tsp
- Fresh coriander – 3 tbsp
- Small cauliflower – 1/2 head chopped into bite-size pieces
- Medium onion – 1 finely chopped
- Peas – 1/3 cup (fresh/frozen/canned)
- Medium carrot – 1 grated
- Small potato – 1 grated
- Olive oil – to grease baking sheet

Directions
- Preheat oven to 500°F (260°C).
- In a large bowl, mix together dry ingredients (down to the dashes in the ingredient list).
- Stir in enough water to create a batter, almost pancake-batter consistency, but a little thicker, It took me about 1 ¼ cups of water.
- Prepare veggies, and then dump them all into the batter, mixing to coat well.
- Using a spoon, take scoops of battered veggies and drop onto well oiled baking sheet – like when making drop cookies.
- Bake for 8 minutes, then flip and bake another 10 minutes, until golden brown.
- Once out of the oven sprinkle chat masala.
- Serve with Raita, Ketchup, or Hot Sauce.
