Thai Garlic Prawns Curry

During this lockdown while #stayhome my son made this Thai garlic prawns curry for dinner. Quick, simple and a very tasty recipe. I served it with boiled rice, but you can serve on noodles, zucchini or quinoa according to your diet.

Thai Garlic Prawns Curry
Keto Fried Fish
Ingredients:
- Jumbo prawns – 550 gm peeled and deveined
- Olive oil – 3 tbsp
- Ginger – 1 tbsp chopped
- Spring onion – 1 cup white part
- Green chillies – 4 cut in julienne
- Chopped fresh coriander – 2 tbsp
- Red chilli flakes – 2 tsp
- Chopped garlic – 1 tbsp
- Chopped tomatoes – 2 small or 1 big size
- Coconut milk – 1 1/2 cup
- Chopped green chilli – 1
- Red chilli powder – 1 tsp
- Turmeric powder – 1/4 tsp
- Salt – 1 tsp or to taste
- Lime juice – 1 tbsp
Garnishing;
- Chopped spring onion – 1/4 cup (green part)
- Chopped fresh coriander – 2 tbsp

Method:
- In a pan, heat up 1 1/2 tbsp oil and stir fry chopped ginger. Add prawns and fry for 1 to 2 minutes. Take it out and set aside.
- Heat up 1 1/2 tbsp oil and stir fry white part of spring onion.
- Add green chillies and fresh coriander, fry.
- Add chilli flakes and chopped garlic. Mix it well.
- Add chopped tomato and cook until tomatoes become softened.
- Then add coconut milk and chopped green chilli, stir well. At this point add prawns juices if remain while frying.
- Add red chilli powder, turmeric powder and salt. Stir and cook until thicken the curry.
- Add prawns and cook for 1 to 2 minutes. Finally add lime juice.
- Pour prawns curry on boiled rice or any of your choice, garnish with green part of spring onion and fresh coriander.
