Chickpeas Raita
Ingredients:
Ingredients to Marinate the Mutton:
• Mutton – 2 kg
• Yogurt – 1 cup
• Ginger garlic paste – 2 tbsp
• Salt – 1 tsp
• Turmeric (Haldi) – 1/2 tsp
• Red chilli powder – 1 tsp
• Biryani masala – 2 tbsp
• Lemon juice – 2 tbsp
• Tomato – 2 chopped
• Whole green chillies – 7 to 8
• Fresh coriander – 1/4 bunch chopped
• Mint leaves – few, chopped
Method (Marination):
- In a bowl add mutton, yogurt, ginger garlic paste, salt, haldi, red chilli powder, biryani masala, lemon juice, chopped tomatoes, green chillies, fresh coriander and mint leaves.
- Mix well and marinate for 2 hours or overnight for best flavour.

Ingredients for Biryani:
• Oil – 1/3 cup
• Ginger garlic paste – 1½ tbsp
• Rice – 750 g (boiled with 2 tbsp salt and 2 tbsp oil)
• Potato – 2 to 3
Cooking Method:
- Heat oil in a pan and sauté ginger garlic paste.
- Add the marinated mutton and cook until the mutton is half tender.
- Add potatoes and cook until the mutton and potatoes are fully tender.
- Add lemon slices, green chillies, fresh coriander, mint leaves and fried brown onions.
- Spread the boiled rice on top. Add food colour, sliced tomatoes, coriander, mint leaves and fried onions.
- Cover and cook on dum for 15 minutes.
Serve hot with fresh salad and raita.
