Today, quiche is considered as typically French. However, chicken mushroom spinach Quiche baked in pastry containing chicken, spinach and mushrooms.

Quiche Mixture:
- Finely chopped onion – ½ cup
- Boiled boneless chicken cubes – 1 cup
- Tinned mushrooms – ½ cup
- Blanched & Chopped Spinach – ½ cup
- Butter- 2 tbsp
- White pepper- ½ tsp
- Nutmeg powder- ¼ tsp
- Salt- ½ tsp
- Milk- 1 cup
- Cream- 1 cup
- Shredded cheddar cheese- 1 cup
- Eggs- 4
- Parmesan cheese- 1 tbsp (Optional)
Method:
- Preheat oven to 180 degrees C. Roll quiche crust, set it in a pie dish and keep aside.
- In a pan, melt butter and add onion. Cook until onion is tender.
- Add boiled chicken cubes, mushroom and chopped blanched spinach. Mix them well.
- In a bowl whisk together eggs, milk, cream and cheese along with salt, pepper and nutmeg powder. Add the cooked veggie mixture into it. Gently mix them together.
- Pour into pie crust and sprinkle with Parmesan cheese.
- Bake quiche at 180 degrees C for 35-40 minutes until filling is puffy and set.
Ingredients for Quiche Crust:
- Flour- 2 cups
- Unsalted butter – ¾ cup
- Egg yolk- 1
- Salt- ½ tsp
- Chilled water – to knead the dough
Method:
- Sift the flour in a large bowl and add the salt.
- Cut the butter in tiny cubes. Incorporate the butter to the flour with your finger tips until it resembles like crumbs.
- Add the egg yolk and knead dough by adding chilled water. Shape the dough in a ball, wrap it with cling film and keep it in the refrigerator for at least half an hour.
- Let the dough warm up a little before rolling it out.
- To minimize shrinkage when baking pie shell, line the unbaked shell with 12-inch (30 cm) square of aluminum foil.
- Fill with dried beans or peas. Cover rim of shell with strips of foil. Bake in a preheated oven on 230 C until lightly browned, about 10 minutes.
- Lift out foil and beans. Let shell cool on wire rack.
