Cranberry Walnut Cream Cheese Muffins
Cranberry walnut cream cheese muffins are a delicious twist on your tradition muffins, especially because the cream cheese that is added into the mixture makes your muffins extra soft and moist to eat.

Servings – 12
Ingredients:
- Softened butter – 1/2 cup
- Cream cheese, softened – 1/2 package (4 ounces)
- Sugar – 3/4 cup
- Eggs – 2
- Vanilla extract – 3/4 tsp
- All-purpose flour – 1 cup
- Baking powder – 3/4 tsp
- Salt – 1/4 tsp
- Fresh or frozen cranberries – 1 cup
- Chopped walnuts – 1/4 cup
Drizzle:
- Confectioners’ sugar – 1 cup
- Milk – 1 1/2 tbsp
Method:
- Strain flour, salt and baking powder, set aside
- Take a bowl, cream the butter and sugar until light and fluffy.
- Then add ceam cheese and beat for 5 seconds.
- Then add eggs, one at a time along and beat well with vanilla extract.
- Now add flour mixture and fold with light hands.
- Then add cranberries and walnuts.
- Pour this mixture in greased muffin cups or tray and bake in preheated oven on 180º C for 20 to 25 minutes.
- Let them cool for 5 minutes before removing from pans to wire racks.
- Now mix confectioners’ sugar and milk and drizzle over muffins.
