- 700 g mutton
- 3 onions
- 3 tomatoes
- 1/2 tsp red chili powder
- 1 tbsp ginger-garlic paste
- 2 green chilies
- 1 tsp cumin powder
- 2 tsp coriander powder
- 3/4 tsp salt
- 1/4 tsp turmeric (haldi)
- 1 tsp chili flakes
- 400 g karela / bitter gourd

- A little oil for frying
How to make Soft Chapati
Method
- In a large pan, combine the mutton, chopped onions, tomatoes, ginger-garlic paste, and green chilies (ground together).
- Add red chili powder, cumin powder, coriander powder, salt, turmeric, and chili flakes. Add a little water, mix well, cover, and cook until the meat is tender.
- Wash and dry the karela (bitter gourd).
- Heat a little oil in a separate pan and fry the karela.
- Once the color changes slightly, add lightly chopped onions and cook on low heat. Do not brown the onions too much.
- When the mutton is cooked, allow any excess water to dry slightly.
- Place a strainer over the meat pan and pour the fried karela and onions into it, letting the oil drain into the meat. Use this flavored oil to fry the meat further.
- Once the meat is nicely fried, add the karela mixture back into the pan.
- Mix everything well and cook on low heat (“dum”) for a few minutes.
- Garnish with fresh coriander.
Serve hot with salad and chapatis.
