  • 2 cups all-purpose flour
  • 1 cup fine semolina (sooji)
  • 1 tsp baking powder
  • ¾ tsp salt (or to taste)
  • ½ tbsp honey
  • 1 glass warm milk (as needed)

Step 1: Prepare the Dough
  • In a large bowl, mix flour, semolina, baking powder, salt, and honey. Gradually add warm milk and knead into a soft, smooth dough. It should not be sticky.
  • Divide into 4 portions, apply a little oil, and let it rest for 30 minutes.
Step 2: Create the Layers
  • Grease your work surface with oil. Take one dough ball and stretch it into a thin sheet using your hands.
  • Brush melted butter over it and sprinkle a little flour. Fold one side toward the center, then fold the other side over it to form a strip. Roll it into a cylinder (log shape).
  • Repeat with all dough and let them rest for 10 minutes.
