Kadhi Pakoda is a popular North Indian dish made with a yogurt-based gravy (kadhi) and deep-fried gram flour (besan) dumplings (pakoras). It’s a comforting and flavorful dish often served with steamed rice or roti. Here’s a basic recipe to make Kadhi Pakora:

Kadhi Pakora Recipe

Ingredients for Kadhi slurry:

  1. Sour yogurt – 250 gm
  2. Gram flour (besan) – 1/2 cup
  3. Water or add as required

Ingredients for Kadhi masala:

  1. Oil – 2 tbsp
  2. Fenugreek seeds – 1/2 tsp
  3. Mustard seeds – 1/2 tsp
  4. Cumin seeds – 1 tsp
  5. Dry red chillies – 3 to 4
  6. Hing – 1/4 tsp
  7. Onions – 4 tbsp chopped
  8. Ginger garlic paste – 1 tbsp
  9. Red chilli powder – 1 tsp
  10. Dry coriander powder – 1 tsp
  11. Turmeric powder – 1/4 tsp
  12. Salt – to taste
  13. Fenugreek leaves – 1 tbsp

Keto Samosa

For tempring:

  1. Degi mirch – 1 tsp
  2. Oil – 1/4 cup

For garnishing:

Fresh cilantro leaves for garnish

For Pakoras:

1 cup besan (gram flour)
1 medium-sized onion, finely chopped
1-2 green chilies, finely chopped
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
Salt to taste
Water as needed
Oil for deep frying

Instructions:

  • Start by making the pakoras. In a mixing bowl, combine besan, chopped onions, green chilies, turmeric powder, red chili powder, and salt. Gradually add water to make a thick batter.
  • Heat oil in a deep pan for frying. Once the oil is hot, drop spoonful of the batter into the oil and fry until they turn golden brown. Remove them from the oil and place them on a paper towel-lined plate to drain excess oil.
  • In a bowl, whisk together yogurt and besan. Gradually add water to make a smooth mixture.
  • Heat oil in a deep pan or kadhai. Add mustard seeds, cumin seeds, fenugreek seeds, asafoetida and dried red chilies. Let them splutter.
  • Add sliced grated ginger and chopped green chilies. Sauté for a minute.
  • Pour the yogurt mixture into the pan and bring it to a gentle boil, stirring continuously to avoid lumps.
  • Once the kadhi starts boiling, reduce the heat and let it simmer for 20-25 minutes until it thickens, stirring occasionally.
  • Add the fried pakoras to the kadhi and simmer for another 5-10 minutes.
  • Garnish with chopped cilantro leaves before serving.
  • Serve hot with steamed rice or roti.
