Hot water dough, or scalded dough, is used in China to make light and tender dumpling wrappers. However, this versatile method of making dough can be applied to so many other recipes as well, such as paratha and a variety of stuffed flatbreads. Achari Keema Recipe
Ingredients:
- All purpose flour – 3 cups
- Sugar – 1 tbsp
- Salt – to taste or 3/4 tsp
- Boiling water – as required
- Ghee for layering and frying

Method:
- Add flour, sugar and salt to a heat-safe mixing bowl.
- Slowly and carefully pour the hot water into the bowl while mixing with a spatula.
- Continue mixing until a shaggy dough is formed.
- Knead the dough by hand for a few minutes, until the dough is fairly smooth.
- Cover and let it rest for 30 minutes. The dough is now ready to be used.
- Divide the dough into portions and roll them thin. Apply melted butter and fold as shown in the video. Make square shapes and set aside.
- Roll again and fry on skillet with butter or ghee until golden brown and crispy.
