Vegetables Rice Salad
Ingredients:
- 2 cup medium grain white rice (cooked, rinsed, and drained)
- 1/2 medium red onion, minced
- 1 clove garlic, minced
- 2 small purple eggplants, halved, grilled, then chopped into 1/2″ dice
- 2 smallish zucchini, halved, grilled, then chopped into 1/2″ dice
- 1/2 red bell pepper, seeded and diced
- 4 sun-dried tomatoes, oil packed, diced
- 1 cubanelle pepper, seeded and thinly sliced
- 1 big handful parsley leaves, chopped
- 2 tsp Dijon mustard
- 3 Tbsp vinegar
- 1/2 cup extra virgin olive oil
- Salt and pepper to taste
Method:
- Cook to desired level, the rice is rinsed, drained, and combined with ingredients of your choice.
- First, whisk the vinegar, mustard and oil in a large mixing bowl, then put everything else in and toss to combine.
