
Rice kheer, also known as rice pudding, is a popular and delicious dessert in many South Asian cuisines. It’s a creamy and sweet dish made with rice, milk, and sugar, flavoured with cardamom and garnished with nuts. I created this kheer with caramelised sugar to give it a nice pink colour. Here’s a super easy and delicious recipe for preparing caramel kheer:
Caramel Kheer

Ingredients:
- Rice – 1/2 cup (soaked for 30 to 50 minutes)
- Milk – 1 litre (set aside 1 cup)
- Bread slices – 2
- Sugar – 1/2 cup
- Green cardamoms – 2
- Dry nuts
Method:

- Soak rice for 30 to 50 minutes.
- Blend bread slices in cup of milk and set aside.
- Add remaining milk in a pan along with green cardamoms and soaked rice. Cook on low flame until rice is tender.
- In a separate pan, add 1/4 cup of sugar and cook on very low flame until sugar turns brown (make sure the flame is low, otherwise the sugar will burn and you will have burnt taste in your kheer).
- When sugar dissolves, add 2 tbsp of water and cook on very low flame to get sugar syrup.
- Add this sugar syrup into the kheer.
- Then add 1/4 cup of sugar into the kheer along with the bread milk. Cook until your kheer turns into a nice thick texture.
- When kheer is ready, refrigerate until it cools down.
- Garnish with chopped nuts.
- Super easy and yummy kheer is ready to serve.
