Chicken Pulao

There are many recipes for chicken pulao, but I like to make it with basic and simple ingredients, as well as an easy method. This is one pot pulao, and I am sharing it especially for busy moms. I like to serve it with kachumber salad and chickpeas raita, which is my daughter’s favourite.

Keto Mutanjan Recipe

Ingredients:

  1. Oil – 1/2 cup
  2. Onion – 2 small (sliced)
  3. Rice – 375 gm (Long Grain Basmati Rice Soak for 30 min)
  4. Chicken – 1 kg
  5. Whole garam masala (Black Cardamom 3, cinnamon 2 pieces, green cardamom 6, cloves 6, black Pepper Corns 1 tbsp, cumin 1 1/2 tsp, bay leaves 2, fennel seeds 1 tsp)
  6. Ginger garlic paste – 2 tbsp
  7. Green chilli paste – 2 tbsp
  8. Yogurt – 1/3 cup
  9. Kewra water – 1/2 tbsp
  10. Garam masala powder – 1 tsp
  11. Tomato – 1 sliced
  12. Green Chilies – 4 to 6 sliced
  13. Ginger flakes – 1 tbsp
  14. Fresh coriander – 1/4 bunch chopped
  15. Salt – 1/2 tbsp or to taste

Method:

  • Heat up oil and sauté sliced onion. Take out 1/2 of the sautéed onion and set aside.
  • Fry the remaining onion until it’s golden brown, them take them out from the pan. Spread in a plate and set aside.
  • Now add whole garam masala and stir fry. Add ginger garlic paste and fry for 2 minutes.
  • Then add green chilli paste and fry along with sautéed onion.
  • Add chicken and fry well. Add yogurt, kewra water, garam masala powder, tomato, green chillies, ginger flakes and fresh coriander. Mix and fry well.
  • Add water according to rice and bring to boil.
  • Add salt and soaked rice. Cook until water dries out a bit and you can see the rice on top.
  • Spread fresh coriander and fried onion. Cover and cook on low flame for 10 minutes. Leave it as it is for 25 minutes.
  • Serve with salad and raita.
