Chicken Pulao

There are many recipes for chicken pulao, but I like to make it with basic and simple ingredients, as well as an easy method. This is one pot pulao, and I am sharing it especially for busy moms. I like to serve it with kachumber salad and chickpeas raita, which is my daughter’s favourite.
Chicken Pulao

Ingredients:
- Oil – 1/2 cup
- Onion – 2 small (sliced)
- Rice – 375 gm (Long Grain Basmati Rice Soak for 30 min)
- Chicken – 1 kg
- Whole garam masala (Black Cardamom 3, cinnamon 2 pieces, green cardamom 6, cloves 6, black Pepper Corns 1 tbsp, cumin 1 1/2 tsp, bay leaves 2, fennel seeds 1 tsp)
- Ginger garlic paste – 2 tbsp
- Green chilli paste – 2 tbsp
- Yogurt – 1/3 cup
- Kewra water – 1/2 tbsp
- Garam masala powder – 1 tsp
- Tomato – 1 sliced
- Green Chilies – 4 to 6 sliced
- Ginger flakes – 1 tbsp
- Fresh coriander – 1/4 bunch chopped
- Salt – 1/2 tbsp or to taste
Method:
- Heat up oil and sauté sliced onion. Take out 1/2 of the sautéed onion and set aside.
- Fry the remaining onion until it’s golden brown, them take them out from the pan. Spread in a plate and set aside.
- Now add whole garam masala and stir fry. Add ginger garlic paste and fry for 2 minutes.
- Then add green chilli paste and fry along with sautéed onion.
- Add chicken and fry well. Add yogurt, kewra water, garam masala powder, tomato, green chillies, ginger flakes and fresh coriander. Mix and fry well.
- Add water according to rice and bring to boil.
- Add salt and soaked rice. Cook until water dries out a bit and you can see the rice on top.
- Spread fresh coriander and fried onion. Cover and cook on low flame for 10 minutes. Leave it as it is for 25 minutes.
- Serve with salad and raita.
